Before a trip is an itinerary it is forty saved links and no shape. Plan it as a board with the neighbourhood, the opening days and the cost on each thing, and let the days assemble themselves once you can see it.
The short version
Trip planning has two stages and most tools only serve the second. Before you can build an itinerary you have to gather candidates, and that stage is visual: places you might go, sorted by area and by what they cost. Keep the neighbourhood and the closed days on the item, because those decide what can share a day.

What people use today
Wanderlog and TripIt handle bookings and day-by-day routing well, and this does not try to. They start once you know where you are going. The weeks before that, when it is a folder of tabs and a vague sense of a neighbourhood, have no tool at all.
What a board tracks here
Fields you name yourself, on the item they belong to. These are the ones that decide a purchase and have nowhere else to live.
